Mama Needs a Cocktail

 Quarantine is exhausting.

strawberry lemon tequila

Way back in March (i.e. a few years ago), overnight I became chief caregiver, teacher, cleaner, cook, household manager, and husband-taker-carer, in addition to running MiliMili with Rose. It has been... a lot.
.
And the highlight to many of my days? BEDTIME.
Love those kids dearly and unconditionally, but 8pm can never come soon enough.
Thank freakin' goodness for sleep routines and schedules.
The next best thing after bedtime? My evening cocktail. (On weekends - it's a naptime cocktail.)
.
Since I have a lemon tree and a gazillion lemons this time of year, this recipe from Caroline Chambers was the perfect refreshing use of my current ingredients.

A Strawberry Lemon Tequila Situation
Makes 4 cocktails
.
1 cup blanco tequila
1 cup fresh strawberries, destemmed
1/2 cup fresh lemon juice
1/4 cup triple sec
1 tablespoon fresh mint leaves, plus more for garnish
Agave syrup or sugar to taste, if needed.
.

Blend all ingredients on high speed for 20-30 seconds. Taste and add sweetener, if needed.

Pour over ice and serve garnished with mint and thinly sliced strawberries.

Check out Caroline's blog for the original recipe + some super useful substitutions (especially useful since certain groceries can be so hard to come by these days!)
